Caramelised Red Onion tart

As you know, on September 2020, I am taking on the challenge of offering you a new recipe every day based on a seasonal vegetable or fruit. This Caramelised Red Onion tart is one of my favorite.

I was looking for inspiration on my last visit to the market. My eyes suddenly fell on large red onions. I immediately thought that this would go very well with balsamic vinegar and maple syrup. You’ll see, the sweet and sour result really is delicious.

As for the tart crust, I thought it was the opportunity to try the Del’s cooking twist recipe “Olive Oil Whole Wheat Pie Crust”. Now based in Canada, Delscookingtwist regularly offers baking tips. I highly recommend her website which has taught me a lot.

CARAMELISED RED ONION TART

Caramelised Red Onion tart

Ingredients

The amazing Olive Oil Wheat Pie Crust signed Dels' Cooking Twist
2 cups (240g) whole-wheat flour (I've used semi-whole-wheat flour)
1 pinch salt
1/3 cup + 1 Tablespoon (100 ml) olive oil
1/3 cup + 1 Tablespoon (100 ml) water, lukewarm

The filling
3 large red onions
1 tbsp maple syrup
3 tbsp balsamic vinegar
Butter
Salt and pepper
Some cherry tomatoes

Instructions

∞ Prepare the dough according to Del's recipe (instruction from Del's blog):

  1. In a large bowl, mix all the ingredients for the crust with a wooden spatula until they stick together and form a thick dough. Cover the bowl with a cloth and let sit at room temperature for 5-10 minutes.
  2. Roll out the dough into a large disk, and carefully transfer into the prepared pie dish.

∞ Set aside the dough, in a cool place while preparing the filling.
∞ Preheat the oven to 180°C.
∞ Mince the onions finely.
∞ Melt a bit of butter in a frying pan. Add the red onions, salt and pepper. Leave on a medium heat for about 10 minutes while stirring regularly.
∞ Add 3 tsp of balsamic vinegar and 1 tsp of maple syrup and caramelize again for about 10 minutes, lowering the heat slightly and watching.
∞ In the meantime, take out the tart base and prick the dough with a fork.
∞ Cut the cherry tomatoes into slices.
∞ Spread the caramelised red onions. Add the tomatoes and some herbs (thyme for example).
∞ Sprinkle with a touch of maple syrup. Place in the oven for about 35 minutes.
