Rustic Mirabelle Plum & Almond Tart

by Caroline

On September 2020, I am taking on the challenge of offering you a new recipe every day based on a seasonal vegetable or fruit. Today I’m sharing a dessert recipe: a Rustic Mirabelle Plum & Almond Tart.

So today is about mirabelle plums!

Yes, it is now time for a nice seasonal fruit tart. But not just any tart, the Mirabelle Plum & Almond Tart is the most delicious to try in September.

Why rustic? To do whatever you wan’t with the look of your pie!

Then regarding the flavors, I’d say that the almonds are the best to try with mirabelle plum. The result is so smooth and tasteful.

When should you taste this rustic Mirabelle Plum & Almond Tart?

This Mirabelle plum tart is of course perfect for dessert, but I also recommend it for breakfast with yoghurt for instance. The fact that it is fruity, low in sugar and made with nuts makes it an ideal morning meal.

Enjoy,
Caroline

Energy 200 Repos • Resting time 20 grams fat

Ingredients

For one medium pie (4 small pieces). Don't hesitate to double the quantities for a large pie.

For the pie dough
Wheat flour: 2/3 cup
Almond powder: 1/3 cup
Sugar: 1 tbsp.
Fleur de sel: 1 pinch
Option 1 with cream: 2 tbsp. cream (I've used almond cream) & 1,5 tbsp. neutral vegetable oil (coconut or sunflower)
Option 2 without cream: 30 g water & 2 tbsp. neutral vegetable oil (coconut or sunflower)

For the garnish
Mirabelle plums: about 250 g
Almond powder: around 1 tsp
Crushed almonds: around 1 tsp

Instructions

∞ Prepare the dough: Mix the dry ingredients, add the liquid ingredients. When a dough is formed, spread the preparation on a baking sheet. Keep the dough in a cool place while preparing the filling.
∞ Preheat the oven to 180°C.
∞ Rinse the mirabelle plums, cut them in half to gently stone them.
∞ Crush the almonds.
∞ Prepare the tart: spread a little almond powder on the pastry, add the crushed almonds. Finally, arrange the mirabelles in circles from the centre, leaving enough dough on the side fold it.
∞ Add a little sugar to sprinkle the tart.
∞ Bake for 30-35 minutes.

Notes

Multiply the portions by two to obtain a "normal" size pie.
