Do you know a better way to end the first week of December than a Chickpeas Vegetarian Winter Burger?

I promised you some warm & delicious recipes this month, I think I can hardly do better 😉

How long does it take to prepare this Chickpeas Vegetarian Winter Burger?

This is not the fastest recipe, as you need to start working in the kitchen 3 hours and 30 minutes before dinner time if you want to make your own burger buns.
That said, if you prefer to leave this part of the recipe to your favourite baker, then count only about 30 minutes of preparation time.

How to slightly twist this burger recipe?

Cheese is key! I used Tomme de Savoie, one of my favourite cheeses in winter season, but I’m thinking of trying out a version with raclette cheese. Even more wintery isn’t it?

Chickpeas Vegetarian Winter Burger

Energy 200 Repos • Resting time 20 grams fat

Ingredients

Burger buns:
Baker's yeast powder : 1 tbsp.
Flour: 220 gr (ideally 125 gr T45 flour / 95 gr T55 flour)
Salt: ½ t.c.
Sugar powder: 1 tbsp.
Melted butter: 20 gr
Egg: ½
Sesame seeds

Chickpeas steaks:
Chickpeas : 300 gr
Eggs: 2
Fresh cheese: 60 gr
Oat flakes: 1 tbsp.
Parsley: 1 tbsp.
Cumin: 1 tbsp.
Chili pepper: 1 pinch
Salt: a pinch

Filling:
Red onion: 1
Fresh spinach leaf
Cheese (I used Tomme)

Instructions

For 3 burgers

Burger buns' preparation:
Preparation time: 20 min. Rest: 1h45. Cooking time : 15 min.

  • Step 1
∞ Dilute and mix the yeast in 5 cl of lukewarm water. Cover with a clean cloth and leave to stand for 10 minutes until the mixture foams slightly.
∞ In a container, sift the flour and salt. Mix with the sugar. In the centre, add the yeast mixture and 4 cl of additional warm water. Add the egg and melted butter.
  • Step 2

∞ Lightly oil a second container and place the ball of dough in it. Cover and leave to rise in a warm place away from the air for one hour.
One hour later, the volume of the dough should double.

  • Step 3
∞ Break the dough with your hand and knead for another 2 minutes.
∞ Divide the dough into 6 and roll them into individual balls on a floured work surface.
∞ Place them on a baking sheet. Flatten them a little.
∞ Cover with a tea towel and leave to rise for 45 minutes.
  • Step 4

∞ 10 minutes before the end of the resting time, preheat the oven to 200°C.
∞ Sprinkle with sesame seeds.
∞ Put the breads in the oven for about 15 minutes. After baking, set aside on a grid.

During the burger buns are in the oven, prepare the chickpeas steaks:
Preparation time: 15 min. Cooking time: 5-7 min.

∞ In a chopper or using a slicer, chop the chickpeas into small pieces. Set aside.
∞ Cut the fresh cheese into pieces.
∞ Add the eggs, cheese chunks, oatmeal, and herbs & spices. Mix with the chickpeas.
∞ Heat an oiled frying pan. Count 2-3 tbsp of preparation per chickpeas steak (about 4 steaks).
∞ Let it brown well before turning the steak so that it doesn't split.
Let it for about 4 minutes for the first side before turning.

Finish the burger
Preparation : 5 min.

∞ Mince an onion.
∞ While the last steak's cooks, grill the chopped onion in a little oil.
∞ Assemble the burger as you like!
