One-pot Quinoa Coral Lentils & zucchini
On September 2020, I am taking on the challenge of offering you a new recipe every day based on a seasonal vegetable or fruit.
This One-pot Quinoa Coral Lentils & Zucchini is a delicious way to nicely twist the simple Zucchini recipes that you are used to do again and again.
What is this One-pot Quinoa made of?
I’m sure that you already know the famous one pot pasta signed Martha Stewart.
The idea is simple: cook all the ingredients at the same time in one pot (another little bonus: no dishes!).
I particularly like the one pot recipes because the possibilities are endless! Here quinoa & coral lentils for more protein. I also paid attention to my choice of spices to match the zucchini: paprika, curry, turmeric and cumin.
In short, a complete meal in a pan!

1 red onion ∞ Peel and slice the red onion and cut the zucchini into slices. Optional: a vegetable bouillon to melt in water during cooking!Ingredients
2 zucchinis
120 grs of raw quinoa
130 grs of coral lentils
60 cl of water
1 tbsp of olive oil
2 tsp of paprika (I particularly like smoked paprika for my part!)
1.5 tsp of curry
1 tsp of turmeric
1 tsp of cumin
Salt & pepperInstructions
∞ Weigh the quinoa and coral lentils. Rinse and drain.
∞ In a saucepan with a tablespoon of olive oil, fry the onions for a few minutes.
∞ Add the spices: paprika, curry, turmeric and cumin. Stir well with the onion.
∞ Add the zucchini sticks, quinoa, lentils and water.
∞ Once the water is boiling, lower the heat and simmer for 15 minutes.
∞ The dish is well cooked when the liquid is fully consumed. Now serve it hot!Notes
