Easy oven baked falafels

Falafels is a must when you don’t (or less) eat meat. These Easy oven baked falafels are the best when you have a busy schedule but you still want to treat yourself with a delicious dish. In my case, weeks without falafels are very rare!

Lebanese gastronomy is one of my favorite. As I can’t feed myself exclusively in my favorite Lebanese restaurants, I looked for easier recipes to incorporate to any everyday life. This does not in any way replace a meal at the Bistrot Beyrouth in Charonne (Paris) or the Artisan Libanais in Oberkampf (Paris). But it allows me to wait between two dinners!

How to garnish these easy oven baked falafels?

In a main dish, falafels allow to vary the textures and add crispness to the plate! Falafels are perfect in a quinoa salad, with a vegetable risotto, or even as a side dish to soup. One of my favorite option is to eat these with a spinach leaves salad, cheese & dry fruits. A last idea: mini falafels to add protein to an appetizer!

What about the dressing? enjoy these with a yoghurt/cumin sauce or some tahini.

Falafels au four

Ingredients

Chickpeas : 265 g (1 tin or dry)
Red onion: 1/2 
Flour: 2 tbsp
Parsley: 2 tbsp
Cumin: 2 tsp
Coriander: 3 tsp
Salt: 1 pinch
Garlic: 1 clove (I personally don't eat garlic but it should be even better with some!)

Instructions

∞ Drain the chickpeas. Remember to save the chickpea juice, which can partly replace the egg whites in your other recipes!
∞ Place the chickpeas on a paper towel. Let it dry for 2 hours (especially if you are using some dry chickpeas)
∞ Preheat the oven to 180°C
∞ Mix the onion and the spices.
∞  Add the chickpeas, the flour, and mix it again.
∞ Make some dumplings with the preparation.
∞ Add a drizzle of oil on top of the falafels before putting them in the oven.
∞ Bake for 20 minutes at 180°C. Remember to turn the dumplings in the middle of cooking.

 

Notes

It will be even better to use dry chickpeas soak: first soak them overnight and then cook them in a large volume of water for 1 hour after boiling.
