I definitely suggest this Chilled Chickpeas, Artichokes and Cucumber Soup to end the summer with a dish full of savor.

You’ll quickly see that the combination artichoke heart & cucumber, is so delicious. As for the chickpeas, they provide both a smoother texture and a source of protein here.

Energy 200 Repos • Resting time 20 grams fat

Ingredients

Artichokes: 180 gr (or a jar of artichoke hearts)
Cucumber: 1
Chickpeas: 100 gr
Olive oil: 1 tbsp
Cider vinegar: 1 tbsp
Mint: equivalent to 1 tbsp
Coriander: equivalent to 1 tbsp
Espelette pepper: optional

Instructions

Simply mix it all together, and enjoy it fresh!
