Chickpeas tomatoes vegetarian salad
On September 2020, I am taking on the challenge of offering you a new recipe every day based on a seasonal vegetable or fruit.
Today, and before it’s too late: tomatoes!
This September’s ☀️ makes us want a nice plate of tomatoes… I enjoyed so much this Chickpeas Tomatoes Vegetarian Salad with some grilled red onions.
This recipe is extremely simple, very quick, and perfect for a lunch to go as well.

Red onion: 1 ∞ Mince the red onion. Heat a frying pan and fry the onion in a drizzle of olive oil for a few minutes. Add a few sultanas before extending the heat. Set aside.Ingredients
Chickpeas: 150 g
Nice old tomatoes: 2
Seasonal salad (here lettuce)
Olive oil: 1 tbsp
Cumin: 1 tsp
Lemon juice: 1 tsp
A few dried grapesInstructions
∞ Cut the tomatoes into cubes and prepare the salad. Drain the chickpeas.
∞ In a salad bowl, mix the tomatoes, salad leaves and chickpeas.
∞ Season the mixture: olive oil, lemon juice and cumin.
∞ Arrange the onions on top of the salad mixture.
∞ Serve fresh!
