Banana Bread with walnuts
Banana bread are the best. I like to prepare some on Sunday to enjoy it immediately at brunch, or freeze a few slices to have some on hand for breakfast! In short, it’s very practical for everyday use: simple, delicious & the best to fill up with energy.

I’m trying to improve myself in this discipline… I naturally turned to American recipes to understand where the softness that makes the original recipes so appetizing came from! What flavour?
It’s so hard to choose as possibilities are infinite! Today being at the heart of my September challenge, I immediately thought of nuts of course! A seasonal fruit that goes divinely well with the banana.
What is the composition of this Banana Bread with walnuts?
I often suggest sugar-free recipes for banana bread. This is because the sugar from the bananas (very ripe in this case) is often enough for a breakfast recipe. But it is also possible to eat them with some toppings, as we would do for a toast!

Buttermilk vegan: 1/2 cup (1/2 tbsp. of lemon juice + 1/2 cup vegetal milk) - it works well with soy milk ∞ Prepare the "vegan buttermilk": pour 1/2 tbsp of lemon juice and 1/2 cup of soy milk into a bowl. Mix and leave to stand for 10 minutes. Ingredients
Medium ripe bananas: 3
Eggs: 2
Vegetable oil: 1/4 cup - neutral, I used unflavoured coconut oil
Flour: 1 and 1/2 cup
Baking powder: ¾ tsp
Baking soda: ¾ tsp
1 pinch of salt
Walnuts, roughly chopped: 1/3 cupInstructions
∞ Preheat the oven to 180°C.
∞ In a bowl, mix the flour, baking powder, baking soda, salt and nuts.
∞ Mash the bananas with a fork. Add the mixed eggs, oil, and the buttermilk. Mix well to obtain a smooth texture.
∞ Add dry ingredients and mix until no chunks remain.
∞ Bake 50 minutes in the oven, keeping an eye on it. It really depends on your oven, cooking time varies from 45 minutes to 1 hour! You can stick the tip of the knife in to check the cooking 🙂
